Cheese is a delicious product that comes in many varieties, from creamy brie to tangy cheddar and everything in between.

According to the experts at Wisconsin Cheese, there are three principles of cheese storage – make sure it remains clean, cold and covered.

With those three guiding rules in mind, they have shared “important lessons” when storing cheese and what mistakes to avoid along the way.

1. Don’t suffocate cheese

This may come as a shock to many, but the first rule of cheese storage is to generally “avoid wrapping cheese in plastic wrap”.

While it may be done on instinct to protect the cheese, this is a “mistake” as it needs air to breathe.

Cheese is only coved in plastic wrap in stores because it only stays wrapped for short periods. So what should you use instead?

The experts said: “Our top recommendation is cheese paper. Cheese paper is the waxy paper your cheese often comes in when you get it from your local cheesemonger.

“Coated in both wax and a porous layer of plastic on the inside, cheese paper allows your cheese to breathe without being totally exposed and losing its precious moisture.”

Don’t fret if you don’t have cheese paper on hand as they alternatively recommended wrapping cheese in parchment paper and gently tape it closed.

They claimed this keeps your cheese “moist and flavourful for over four weeks and won’t impart any negative flavours”.

2. Where to keep cheese

Most cheeses like higher temperatures and humidity levels than the rest of the goods in the fridge.

The experts said: “The best place to keep your cheese is in the produce drawer. The higher temperatures and humidity will keep your cheeses moist and flavourful for longer, and you’ll also get the benefit of separating your cheeses from other foods that could impart unwanted flavours.”

This is especially important for soft or fresh cheeses that stand to lose a lot of moisture.

3. Different storage for different types of cheese

There’s a wide variety of cheese out there, all with different tastes and textures. Each type of cheese has its own shelf life and best practices for storage.

When it comes to hard cheese, as they have less moisture, it can safely be stored for up to six weeks after opening. Cheese paper is still ideal, but plastic wrap can be used for short-term storage.

Semi-hard types of cheese have a little more moisture and can be safely stored for about four weeks after opening, but want to use cheese paper here.

Soft and fresh cheese is high in moisture and can safely be stored for about two weeks after opening. These cheeses are “best stored” in clean, airtight containers.
